I started making this soup a few months ago when I was looking for a way to use up Chorizo and turnips I had staring back at me in the fridge. It was easy, healthy, and most importantly, delicious. Recipes like this one were part of the EHM Low Carb and Intermittent Fasting Diet that helped me lose 65 pounds in 1 year. So, here you go – I hope you enjoy my keto turnip chorizo soup recipe! If you’ve never had turnips before, this is a great way to try them. Turnips are one of the few foods that you can eat the roots and the leaves. You can find them year-round but they’re really in season in the late fall, early winter. Look for firm, green leaves, and equally firm and bright roots. There are many varieties of turnips but the most common is purple and white.

Sometimes you can find them with the leaves still attached, but don’t be surprised if you find them separately in the produce section. If you can’t find turnip leaves (aka turnip greens) you can always substitute with any other firm dark green. I’ve used kale and mustard greens, both with great success. Turnips are also affordable and who doesn’t love that?!

Turnips can be peppery but in this recipe, their peppery nature works beautifully. They pair beautifully with spicy chorizo, both complimenting and smoothing out the flavor. I absolutely love them together.

The spices in this soup make a big difference as well. Paprika is a natural companion to chorizo, adding a smokey flavor and beautiful color. Cumin punches up the smokey and herbal side of the soup. Your house will smell amazing when you cook this!

Ok, so it’s simple ingredients that taste amazing together. But we haven’t even talked about how crazy healthy it is.

Ok, so here’s a quick rundown of some of the health benefits of this soup. It’s absolutely packed with vitamins and minerals to help you get and stay healthy (and full!).

Turnips & Turnip Greens

Unlike a lot of vegetables, you can eat the root and leaves of Turnips, and they’re both delicious. They’re packed with fiber, vitamin A, C, and tons of minerals. (3) If you’ve never had turnips (or turnip greens), this is a great introduction to these delicious, and nutritious, root vegetables!

Cumin

So many good things to say about Cumin! It’s another powerhouse of health benefits. From being shown to contribute to weight loss and blood sugar control, it’s also been shown to aid in digestion, a source of iron, and even fend off foodborne illness. And It’s perfect in this soup. (2)

Turmeric

Made from capsicum peppers and packed with nutrients, turmeric biggest benefit is vitamin A. The carotenoid family that includes vitamin A is known for benefits including anti-inflammatory and vision benefits, a powerful antioxidant, and iron, to name just a few. And it’s delicious! (1)

How to Make it

Ok, now that you get why I love it so much, let me tell you how to make it.

Ingredients

  • 1 pound ground chorizo
  • 1 large (or 2 small) turnips peeled & diced
  • 4 cups chopped turnip greens
  • 1 medium yellow onion diced
  • 1 tsp minced garlic
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 chicken bouillon cube
  • 1 bay leaf
  • 5 cups of water
  • ¼ cup heavy cream (optional – leave it out for a still yummy dairy-free soup)
  • Salt & pepper to taste

Make it

In a large heavy soup pot (I love enamel cast iron), brown the chorizo. When it’s almost browned, add the chopped turnips, onion, garlic, and spices. Cook for 5-19 minutes until the onion starts to soften.

Add the bullion, bay leaf, and water. Bring to a boil, add the chopped greens, reduce heat to simmer. Cook for 15-20 minutes.

I love adding heavy cream right before serving. It makes a delicious, filling, and SUPER healthy soup. Enjoy!
